The
Problem ::
The typical wine storage area does not
have adequate humidification. This results in wine losses, from the barrel storage areas,
of 15% or more and also affects the quality of the finished wine.
Old style spinning disk type humidifier
are often designed, based on their rated output but cannot actually be operated at full
output without wetting the floor. This can result in an undersized humidification system
and low humidities in the storage area. In anyway, these systems create Temperature and
Humidity gradients and cannot achieve uniform Humidity.
Humidity levels of 65% in a barrel
storage area are low enough to result in wine losses of more than 15% per year. Air
conditioning units actually remove moisture from the air and are the major cause of low
humidity in storage area.
The
Solution ::
The FOG
SYSTEM is a high-pressure water atomizing system, that breaks water down to droplets, that
are in the 10-micron size range (that's about 1/10th the diameter of a single strand of
human hair). These FOG droplets are so small that they remain airborne and fully evaporate
in the air. This allows you to maintain up to 100% Relative Humidity without actually
wetting things in the storage area. Thus, with the Relative Humidity matching vapour
pressure within the barrels, the vapour migration occurring in mechanically cooled
warehouse is substantially reduced. This reduces the need for topping off by at least
half.
The secret is the FOG. The resultant FOG
spreads inside areas as dictated by the spray nozzle placement. It cools and humidifies
throughout the full range of its movement. The desired level of humidity is kept constant
by aspirated dry bulb/wet bulb Humidistat controls. Thus temperature and humidity
gradients are eliminated.

Calculation ::
The system delivers water droplets in the
region of 10-30 microns, which is required to keep the humidity level at desired level and
to eliminate evaporative losses.
The drop in temperature achieved due to
the evaporative cooling also helps in reducing the evaporative losses.
A brief Calculation in support for the
need to install FOG SYSTEM for HUMIDIFICATION:
A typical Barrel contains 200 Lts of
spirit.
There is an evaporative loss of 15% annually, which comes to 30 Lts.
Taking Cost per lt of spirit as Rs. 100/-.
The loss comes to Rs. 3000 / barrel / year.
So, if there are 4500 barrels, there will be a total loss of Rs. 1,35,00,000/-per year.
Considering the cost of the Fog system and its running cost, the payback for the system is within
first six months of its installation. And after that you start saving a very large
substantial amount, every year, each year.

Storage ::
Spirit
makers throughout the world have always suffered large losses in barrel rooms due to low
humidity levels. The "New World" wines from the Americas and Australia have not
had the benefit of large underground wine cellars with naturally high humidities. They
have had to move to modern-day constructions and create artificial environments with
humidity levels as low as 5%.
Spirits in barrel rooms can lose up to
15% volume per year due to fluctuations in humidity levels. "Topping-Off" is an
exhausting and time-consuming process that can be reduced with our FOG humidification
system. Oak barrels in use or in store suffer from the swings in humidity and can be
damaged even before use.
We have specifically developed our
humidification system for barrel rooms. Expertly designed, tailor-made systems are
installed in the barrel room to accurately maintain the humidity around 85%. Nozzle lines
are mounted in the house to give an equal distribution of the humidity. The system leaves
no wetting of the floors or barrels when in operation and does not affect the stored wine.
The Fog system humidifies and cools the
barrel room reducing losses to 1 or 2% per year, drastically reducing the labor involved
in "Topping-Off".
